Marie Lys IRAKOZE is an Assistant Lecturer in the Department of Biotechnology at INES-Ruhengeri. She holds a Master’s degree in Food Science and Technology from Dedan Kimathi University of Technology in Kenya, where she graduated with distinction. Her research focuses on the fermentation of African indigenous vegetables to enhance their nutritional value, safety, and shelf life. She has published several peer-reviewed articles, contributing significantly to the field of food biotechnology.
